I like the already established kitchen, so if they'd let you run a meal pickup line out of it, that's perfect. Once there's manpower, a few people could take lunches straight to the locals, spread the word...
I think accessible ingredients are going to be the biggest hurdle, when it comes to getting started. Thoughts?
